These vegetable roasted roots are a great side dish for holidays, or any time of the year. I love making roasted roots all fall and winter long. They are very satisfying and vegans and non-vegans always love this dish.
Recipe
-3-4 cups of Brussels Sprouts
-2 sweet potatoes
-2 red potatoes
-1 purple potato
*you can always use any kind of potatoes you want*
-1 fennel
-2 large carrots (you can peel the skin or leave them on)
-2 large parsnips (peeled)
-2 onions
-10-20 cloves of garlic
-3/4 cup of balsamic/ red wine vinegar
-3 tbsp of vegan Worcestershire sauce or Braggs liquid aminos, (you can also use soy sauce or teriyaki sauce)
*Go light on the salt, since the sauces have salt in them. You can always add more salt, you can't take it away*
-1-2 tbsp of extra virgin olive oil
-6-8 stems of thyme (pick leaves off stems) (or 3-4 tbsp of dried thyme)
-6-8 leaves of sage (or 3-4 tbsp of dried sage)
-salt and pepper to taste
*Try adding some squash*
Cut everything in even pieces so it cooks evenly. Bake in preheated oven at 425 degrees for 35-45 minutes, depending how roasted you like it. Mix veggies 2-3 times while cooking. Take out, serve up and garnish with either some fennel or parsley. Enjoy!
*If you find the roots are drying out too much in the oven you can always add some low sodium veggie broth or a little more balsamic vinegar.
*If you don't want to use oil you can make this recipe easily by cooking on parchment paper.
